Ingredients

Milk
200 Millilitres
Cream
300 Millilitres
Vanilla essence (or use vanilla bean)
1 Teaspoon
Sugar
5 Teaspoons
Cornflour
25 Grams
Egg Yolks
3
Butter
20 Grams
Dark chocolate
40 Grams
Nuts
For the sauce
Milk, warm
1 Teaspoon

Steps

  1. Bring milk and cream mixture to boil and then simmer it. Add sugar and stir well.
  2. In a bowl, beat the egg
    yolks well and add cornflour and vanilla essence to this. Whisk well
    till it is mixed thoroughly. (you'l get a light yellow color at this
    stage)
  3. To this egg yolk mixture add some of the hot milk-cream mixture and whisk well as you add in.
  4. Now
    incorporate the mixture from step3 into the rest of the milk-cream
    mixture. (It is very important to stir as you do this). Check for the
    sweetness and add more sugar if required!!
  5. Let it cook for about a minute or two on the low flame and keep stirring. Transfer it into a serving dish and allow it to cool.
  6. For a very simple chocolate sauce, double boil dark chocolate (i used Nestle's dark chocolate) and butter together.
  7. Mix
    one teaspoon of milk to this to get a smooth consistency. Add in some
    chopped nuts to this and serve it along with the custard.
